What rebirth is confirmed to do
The experience description says: rebirth to earn overpowered mythic items. It does not list the price, the stage gate, or which item you receive. Two towers are explicitly called rebirth towers in the current winter note: Festive turret and Ice Dragon. Hell's Vision was called a mythic tower in an older Halloween description, and the current description does not list it.

How to decide
Rebirth is common compared with late stages. More accounts have a first rebirth than have cleared stage 100. Grinding to stage 100 before the first rebirth is not required by any published rule, and the award counts argue against that plan.
The jump from 1 rebirth to 10 is steep (217,809 down to 5,347), and 100 rebirths is rare (70 awards). If the in-game button shows a cost you cannot pay without emptying the towers you need for the next stage, wait. This site cannot calculate payback because the cost and the mythic payout are not published.
After a rebirth, check whether Festive turret or Ice Dragon appears as a rebirth unlock. Those are the only two towers the current description labels that way. Holiday turret is labeled a Robux tower, and Gingerbread Blaster is labeled a gem tower, so do not expect rebirth alone to grant every winter tower.
